Wolves generally shake out the digesta, but may eat the actual stomach tissue of large ruminants, their typical diet.  While they may eat the entire stomach of lesser, smaller prey like rabbit and other small mammals, and seasonal wildfowl, the stomach content of such animals is insignificant in a wolf's diet.  You might want to read L. David Mech's books on wolves.
