&lt;p&gt;Cruciferous vegetables and soy products contain compounds known as goitregens, they effect the thyroid by decreasing the uptake of iodine into the thyroid gland - A BIG problem if you're already deficient or low in iodine (majority of people). &amp;nbsp;&lt;/p&gt;
&lt;p&gt;Soy foods also have the added problem of blocking mineral absorption from the gut due to enzyme inhibitors present in unfermented soy. &amp;nbsp;&lt;/p&gt;
&lt;p&gt;Cooking does destroy some of the goitregens in cabbage, broccoli, b. sprouts and cabbage, I'm not sure whether it's the same with soy or whether fermentation destroys the goitregens as well. &amp;nbsp;Adding iodine rich sea vegetables to you diet is the best way to ensure you're getting enough iodine for healthy thyroid function.&lt;/p&gt;

&lt;p&gt;I've been experiementing using Keffir culture to ferment vegetable juices for a few months now (my boyfriend thinks I've finally lost it and is waiting for me to poison myself) and have found they taste fantastic (they have a slight fizz to them). &amp;nbsp;Fermented lemon and ginger juice is wonderful. &amp;nbsp;I mix them with water rather than drink them undiluted, otherwise I find they create havoc with BSL's and I get the munchies and feel a bit anxious later in the day. &lt;/p&gt;

&lt;p&gt;The problem here is that you could lose &amp;quot;up to&amp;quot; 100% of the nutrients with either process if you steamed / microwaved the vegetable enough. &amp;nbsp;Additionally, maybe I'm wrong but the research / literature I've been exposed to suggests that microwaving vegetables with minute amounts of water often fair better than even steaming. &amp;nbsp;Don't get me wrong, I'd rather use a steamer myself (for other reasons), but I feel you may be off on the literature here. &amp;nbsp;Please reference the source where this information on nutrient loss, etc. is coming from.&lt;/p&gt;
&lt;p&gt;RAW is great, but don't forget that some nutrients become more available with steaming, cooking, etc. Especially for certain types of produce.&lt;/p&gt;

I have been filling up with LOTS of homemade coleslaw, steamed and raw broccoli, cauliflower, and raw green salads and small amounts of lean protein every three or four hours. &amp;nbsp;The weight loss has slowed down quite a bit, and now I am thinking it is the cruciferous vegetables that may be the cause. I have been avoiding carrots and beets because of the high sugar, and tomatoes because of my severe arthritis. &amp;nbsp;I really need some help in further refining my eating program. &amp;nbsp;Thanks.&lt;/p&gt;

&lt;p&gt;I used Sally's recipe for cabbage using whey...Two whole heads of cabbage (or cauliflower) makes alot of *** which is raw and available for weeks in the fridge. A small amount of that goes a long way for nutrients and digestive health.&lt;/p&gt;
&lt;p&gt;You can, of course, always add your type-appropriate fats .......I love Nourishing Traditions!!&lt;/p&gt;

Quote - Some types of foods are reputed to be goiterogenic, which means they create problems with thyroid hormones. Common foods with this reputation are members of the brassica family (which includes cauliflower, Brussels sprouts, cabbage and broccoli) and soyfoods. The brassica family causes problems with the metabolism of thyroid hormones only when they're consumed in high amounts such as when a person regularly drinks cabbage juice (Natural Toxins, 1995, vol. 3). &lt;/p&gt;

&lt;p&gt;Ya I agree with raw juiced greens, although I don't see how they're bad for anybody, even if their &amp;quot;mixed&amp;quot; or &amp;quot;protein,&amp;quot; &amp;quot;types.&amp;quot; I like to make fruit smoothies. I use all kinds of seed bearing fruits not just sweet ones. I use fatty ones, rather neutral water-filled ones, like cucumber for example, etc.. They're all very good. For fruit juice made from sugary fruits, I add only a touch of juice then fill with carbonated water to make a delicious soda of sorts. While it has sugar it still has all of the vitamins and minerals from the fruit. &lt;/p&gt;
&lt;p&gt;Also if you can get a hold of clean raw cream, I agree with her on making raw coleslaws. Those are great side dishes! The healthy sort of saturated fats in the cream help you to absorb more (all?) of the minerals from the vegetables. Also, not sure, but I think raw cream from grass fed cows should have CLA, a naturally occurring trans-fat (trans from omega 6, NOT the same trans-fat that you want to run from, literally...) that is actually very very healthy in that it promotes muscle development, mobilization of excess body fat for energy, and has anticancer properties. &lt;/p&gt;
