Don't be fooled by research fueled by this latest surrogate marker. They really haven't&amp;nbsp; clue whether or not any acute findings have any significance or not. It's just another hypothesis. I have seen no proof that "ED" causes heart disease, just a whole lot of hot air and rampant speculation. Intuitively, it makes sense but the sample was extremely small. I would like to see a larger study that looks at endothelian changes following consumption of individual foods rather than meals. For example, in the "healthy" meal, it might be the soy in the veggie burger, not the yogurt and fruit, that causes the changes.It might also be the salad dressing and not the salad.
