&lt;p&gt;Encurtido &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; 1 &amp;nbsp;large carrot coarsley grated.&lt;/p&gt;
&lt;p&gt;De repollo &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp;1/4 c grated onion and 1/2 cup cider vinegar&lt;/p&gt;
&lt;p&gt;Blanch cabbage in boiling water for one minute. drain, place in cold water to stop cooking. Drain. &lt;/p&gt;
&lt;p&gt;Mix all ingredients together with 2 tsp. salt. I use Himilayian salt and &amp;nbsp;less. &amp;nbsp;Chill covered at least two hours. &lt;/p&gt;
&lt;p&gt;will keep for 2 weeks in fridge. Very good on burgers or any sandwich. &amp;nbsp;&lt;/p&gt;

Lots of good information, though I disagree with some of the content. It's a good way to get some basic knowledge about the foods you should and shouldn't eat and why.&lt;/p&gt;
&lt;p&gt;It's strange, in his book he is against canola oil but in this article he implements it in the cabbage recipe. Hmmm...&lt;/p&gt;
