&lt;p&gt;It's interesting that with ruminants, the fish meal is required to have higher levels of DHA and EPA in the meat. Some ranchers finish cattle on feed that includes flax but it does only increase the ALA. In that case, I would just eat the flax myself. But hens apparently are good converters of ALA to DHA. Humans are not, so it is great that hens can do it for us.&lt;/p&gt;

&lt;p&gt;separate the white from the yolk and eat the yolk RAW. The white can later be cooked to 100 degree C which neutralizes the avidin (a protein) so that it won't bind to the biotin ( B vitamin ) causing a biotin deficiency. Interesting; the yolk should be eaten raw, but the white is best if cooked on low heat (100 deg C). Have I gotten it right ?&lt;/p&gt;

Mercola: &amp;quot;Scrambling your eggs would be one of the worst ways to eat eggs as it actually oxidizes the cholesterol in the egg yolk&amp;quot;. But I still have one question: does that refer to the heat applied in the cooking process, or to the mixing of the white and the yolk ?&lt;/p&gt;
