&lt;p&gt;By the way,crushing fresh Rosemary with a spoon seems to be unneccessarily difficult.Why not invest $ 39.00 in a Thai Mortar made out of solid granite?I make a killer garlic pesto with nothing but fresh garlic,and it's fantastic mixed with cream cheese. &lt;/p&gt;

&lt;p&gt;If you were to make an herbal vinegar, then that should preserve the mixture for up to 2 years.&lt;/p&gt;

Another way to do it is to use good quality dried rosemary along with a drop or so of rosemary essential oil. Just 1 or 2 drops in a big bottle of oil will suffice....highly concentrated stuff! I love cooking with essential oils because of the aromatic element they bring as well as the health benefits. There are lots of ways to use essential oils but one of the easiest is with infused oils. &lt;/p&gt;
&lt;p&gt;Alternatively, you can make the infused oil with fresh herbs in smaller, refrigerated portions so that it is used before it has a chance to turn into a science experiment ;-)&lt;/p&gt;
