I was previously lactose intolerant and suffered with constant reflux. I took Kefir initially as I read on the internet that Kefir could assist with reflux and it has been a God send. I am still on 20mg of Nexium day however, before commencing Kefir I was taking 40mg day and the medication was no longer working. I was unable to drink any hot drinks (including herbal tea), alcohol or coffee without having terrible reflux. Now I feel my life is not so controlled by reflux - I am able to enjoy the occasional glass of wine or cup of tea without suffering for days.

I drink Kefir now after every meal and before bed. I actually crave the stuff. The good thing is it is so healthy. Now that I drink Kefir I no longer have to take a fibre supplement to prevent constipation. Kefir has been a well kept secret and it was not so easy to buy. It took me a week to wait for granuals to come through on order at a health food shop. Again, is this another example of pharmaceutical companies not wanting us to have access to simple remedies to solve health problems? My doctor and the gastroenterologist certainly did not mention this simple healthy remedy suggesting only lifelong medications.

Also, probiotics have been shown to have quite an impact on killing HIV (in test tubes). I am no scientist and am speaking purely from personal experience. Stomach problems are a major side-effect of HIV meds and HIV itself. I have taken probiotics for years and I know for sure that they have helped - again, I cant say what exactly they do, but my tummy is much happier as a result!

And, we can't forget "The Omnivore's dilemma - a natural strory of four meals" by Michael Pollan, that reveals the realty behind milk, meat, veggies and the processing industry.

I heard that many people when they grow up cease to produce one digestive enzime that is very important in breaking down milk's big molecules. So this allergy can be just a warning that a body tipe is not suitable for a dairy diet. As i also grew up in a Brazilian farm i can tell that the waste from breweries (fermented barley) is actually excellent for the cows, it does not contain any chemichals, or even alchool for that matter, and it is an excellent natural way to boost milk production, and i believe this has been done for centuries. Nonetheless i agree that feeding a cow whith toxic waste, as it was done using the waste of slaughterhouses in england prior the mad cow scare, is completely stupid, even criminal, as it is to fed them with any other contaminants or toxic food and medication.

It provides enough of the beneficial bacteria to boost the health of the immune system—body’s essential natural defense system.

Each capsule contains the following:

Medicinal ingredients: One capsule contains, 125 mg Bifidobacteriun bifidum, 125 mg Lactobacillus bulgaricus, 67.2 mg Jerusalem artichoke (Helianthus tuberosus), 133 mg Lactobacillus acidophilus, 25 mg inulin, 25 mg invertase, 18.5 mg amylase, 3.25 mg lipase, 2.72 mg soybean oil.

Non-medicinal ingredients: Hypromellose.

This supplement is unique because each capsule contains food for the beneficial bacterium to live on. Therefore even the last capsule contains the living micro organisms ready to break down food and process waste . You do not have to keep this supplement in the fridge; the bacterium is alive as long as you take it before the expiry date.

Once I got back on them I was fine and have been fine ever since. They are my miracle.

About allergies and yeast...I have suffered with horrible allergies my whole life. I finally decided to see an allergist and found that I'm allergic to ~30 different pollens and allergens. My last resort was going to be injections (which may or may not have worked). But then I heard of a chiropractor where I live that desensitizes allergies using TBM (total body modification). He diagnosed me (using kinesiology) and it was totally in line with what the allergist found but he also found that I had a candida yeast overgrowth and food allergies that were affecting my pancreas (which, in turn, was making all my organs weak and creating even more allergies). He has now desensitized all my food allergies, cleared up my candida and I just finished my final pollen allergy desensitization today. I can finally breathe! I was told that my allergies will be gone forever (I believe it). I'm just so happy that I found this...and all without drugs. All it took was a few 30 minute chiropractic sessions. I recommend that anyone with allergies look into it.

I make it every day and drink about 2 cups before going to bed. It keeps my BMs regular and it has rid my body of systemic candida (yeast overgrowth throughout the body). I also think the calcium in the kefir helps me to sleep better at night.

I bought my kefir grains from someone selling them on Ebay a few years ago. They continue to multiply and I have given them away to my friends who love kefir too. Since I can't get raw milk around here, I do use pasteurized milk and it works great. I take the refrigerated milk, place it in a glass jar, add my kefir grains to the milk, cover it and then leave it on the countertop (room temperature) for 24 hours or until it has the consistency of yogurt. I remove the grains (which looks like a tiny cauliflower), pour the kefir into a glass, and Voila! I have perfect kefir. I refrigerate it for about 12 hours before drinking, as it tastes much better when it's cold. If I accidently let the kefir sit too long on the countertop, it starts to separate into what looks like "curds and whey" it becomes too strong-tasting for my liking. But it's still drinkable, and some of my friends actually prefer it that way. You can also make kefir cheese by dripping the kefir through cheesecloth (I've also used paper coffee filters) until what remains is the consistency of cream cheese. I'm not sure how much of the probiotic benefits it retains when the whey is drained away to make the cheese. Anyway, I can make 1 gallon of kefir for what they charge for 1 quart at the store. Though I've never tried store-bought kefir, my friend told me that mine tastes much better. So experiment for yourselves and discover the wonderful benefits of kefir.

Does anyone know what the benefits would be of heating the milk, and would heating the milk make the kefir more tolerable to people who have a difficult time digesting dairy products? Also, one other question, when i have had dairy and even kefir i get really stopped up, but i would like to know a way to be able to eat kefir and not have that problem. I am not sure if the heated kind poses the same problem for me yet, as i have not had it enough yet to know, but i was wondering if anyone else has that problem and how they deal with it. (Eating alot of roughage like raw vegies etc doesn't help, also taking a good probiotic didn't help either :(
