He always carried a 'healthy chunk' of cheddar cheese wrapped in his pocket. No matter how green, he peeled with his trusty jack knife and consumed. Lived to age of 76. &amp;nbsp; I, being a single male and residing in a large city's core, shop for groceries at either Safeway, or Co-op. Romaine lettuce and kale are only sold in large head, or bunch. Have piled it upon my sardine, or salmon sandwich to the max. making bites extremely awkward, if not sloppy. Squeeze as much air from the bag as is humanly possible prior to returning to rear of refridgerator. Goes black and slimey before I can consume. Usually throw about half in garbage. I am frugal, hey there is Scot here (Bah! Humbug!) and hate wasting that for which I have paid. Why do they not have half heads, or bunches, especially in core stores where singles compose considerable percentage of population? &amp;nbsp; &lt;/p&gt;

&lt;p&gt;For vegetables like carrot, cauliflower and broccoli, freezing can be successful if they are at first 'blanched'.&lt;/p&gt;
&lt;p&gt;My mother used to do this by setting a large pot of salted water to boil, then using a colander to dunk the cut vegetables in the water for a very short time. Then rinsed with cold water,drained and placed in freezer bags or containers.&lt;/p&gt;

&lt;p&gt;Living in Florida, I have seen those &amp;quot;containers of emergency food&amp;quot; that have a shelf life of ten years. &amp;nbsp;I have yet to read a label from one of them unless I am close to a rest-room in case I would become sick to my stomach. &amp;nbsp;The fact that people actually buy them is in of itself a sad situation. &amp;nbsp;People are so brainwashed these days they believe anything.&lt;/p&gt;
&lt;p&gt;Remember the days when the grocery store consisted of fruits, veggies, dairy, meats, and cleaning products? &amp;nbsp;I do. &amp;nbsp;There was very little if nothing with processed containers of food ready to eat. &amp;nbsp;&lt;/p&gt;

Restaurants waste an absolutely unbelievable amount of food, enough to feed the homeless in every city. However they are not allowed to give it away. Someone told me yesterday that a local food bank has to discard fresh produce - 20# bags of potatoes, fresh winter squash, etc. - because it is not taken, and I suspect that's because people either do not know how to prepare fresh food, or are unwilling to spend the time cooking it.&lt;br /&gt;&lt;br /&gt;But there is a darker side to this. We often hear statements like, "Food wasted at (fill in the blank) could feed 50,000 people in Darfur." In fact, massive donations of food sent to Darfur are sold by the government and never get to the hungry. Another example: in Sweden during World War II, people went hungry and food was rationed. Why? Sweden was growing more than enough to feed its own people, but it was more profitable to export it. &lt;br /&gt;&lt;br /&gt;Those who know me at all well will tell you how much I abhor waste.
