&lt;p&gt;The relationship between cholesterol and heart disease is similar to that of skid marks and motor vehicle accidents. High serum levels are an indication that your body&amp;#39;s repair and replacement mechanisms are working hard. People with high cholesterol live longer than those with low cholesterol!&lt;/p&gt;
&lt;p&gt;Of more importance is avoiding the ingestion of rancid cholesterol (as in overcooked eggs) and maintaining a good ratio of LDL and HDL.&lt;/p&gt;
&lt;p&gt;The plaque in heart disease is over 74% polyunsaturated fat, with some of the &amp;#39;saturated fat&amp;#39; being from refined vegetable oils and/or margarine (trans fatty acids). Calcium/calcification is also a component. Calcification of soft tissues is a result of a sub-functioning calcium regulation cycle which occurs when your mineral intakes are out of balance and vitamin D3 levels are not optimal.......and inadequate serum cholesterol levels are related to inadequate serum levels of vitamin D3!&lt;/p&gt;

&lt;p&gt;After all - what sounds healthier....natural cold pressed fats and oils that people have thrived on for centuries? or oils forcibly (by heat or chemicals) extracted from foods, and then further treated(hydrogenated and/or deodorised) to give them a longer shelf life and a more acceptable taste?&lt;/p&gt;

&lt;p&gt;As the inflammation- excessive omega 6 efa's link is one I have been seeing elsewhere I am not inclined to link inflammation to the saturated fats.&lt;/p&gt;

I note that butter is recorded at -45......and apples at -62, whereas almonds are +56, and there is no value for coconut.&lt;/p&gt;
&lt;p&gt;Most of my reading on inflammation indicates that the omega3:omega6 intake should be between 1:1 and 1:4, and that the higher the ratio goes in favour of omega 6 oils the greater the likelihood of inflammation.&lt;/p&gt;
&lt;p&gt;The material to which you refer infers that inflammation is connected to the saturated fats?&lt;/p&gt;

My own experience with bursitis leads me to believe that saturated fats are protective against inflammation. Two weeks of substituting coconut oil for the tiny amount of margerine I was using and the pain went away. &lt;/p&gt;
&lt;p&gt;I have gone from being unable to carry a pint of milk to being able to once again play with my grandson.&lt;/p&gt;

&lt;p&gt;I am overweight, my husband is thin - but he had a small TIA today. Off to the hospital tomorrow - but I have told him 'no more margerine!'&lt;/p&gt;
&lt;p&gt;The canola oil is going - into the composter (I hate waste) and from now on it will be olive oil, real butter and coconut oil, and a teaspoonful of linseed/flaxseed oil daily.&lt;/p&gt;

Things like avocados, nuts, etc. should be eaten followed by a sensible meal. Also, Dr. Mercola mentions in his description of his Coconut Oil that the fat in it is good for many things, including weight loss. We have some great good fat choices, we just have to use them. I'd rather take my chances on these natural sources rather than whats mentioned in this article.&lt;/p&gt;
