&lt;p&gt;Speaking of economics, inflation has already driven the costs of all foods through the roof. &amp;nbsp;And we ain't seen nothin' yet. &amp;nbsp;&lt;/p&gt;
&lt;p&gt;If and when congress authorizes the creation of $700 billion our of thin air, the inflation rate is going to go through the roof! &amp;nbsp;The falling dollar will also send the cost (for Americans) to heights that may well leave our sick, weak, and elderly poor literally starving and/or homeless.&lt;/p&gt;
&lt;p&gt;Certainly the value of our eating locally grown organic foods is immense. &amp;nbsp;We should have been developing this years ago. &amp;nbsp;I suppose most of you know that decades ago Cuba lost access to cheap oil and the people had to go organic or die. &amp;nbsp;They've gone very will with it, indeed! &amp;nbsp;&lt;a rel="nofollow" target="_new" href="http://www.gardeners.com/gardening/content.asp?copy_id=5039"&gt;www.gardeners.com/.../content.asp&lt;/a&gt; &lt;/p&gt;

What really burns me up are the rBST dairy products that do not need labels to inform the public what they are buying. I never buy corn, any longer, which most or all are genetically modified on the store shelves. &amp;nbsp;I only prepare bell peppers that come from family gardens or organic farmers. I cannot digest, easily, a lot of these things at the grocery store any longer. &amp;nbsp;It is amazing how much different organically grown crops are from the mainstream produce at the grocer.&lt;/p&gt;

I cannot see the prices of organic going down lower than the pre-processed, over-processed, tainted food that is unfortunately the only stuff a lot of folks can afford. I would LOVE to be able to purchase everything organic, but I am unemployed at the moment and my husband is working two jobs and I still have to watch my budget for 3 of us big time. I buy organic milk every grocery store trip, and pay the same for a half gallon of that than a whole gallon is of the conventional stuff! Other than that, I don't have much in the budget for 5.99 a pound for organic green peppers when they are 1.99 a pound for conventional. We have a Whole Foods Market here, but it is a 45 minute trip from us, so my choices as far as organic most times are local Giant Eagle stores that have a Nature's Basket section. A bottle of organic juice is at least 4 or 5$ as opposed to 2 or 3$ for conventional. Same with canned veggies and sauces, etc. etc. The only thing that I found that is affordable is bulk organic grains. You can only make so many things with grains. We live in an area where there is farm land, but none of them grow consumable crops because they can't afford it. They are growing mostly animal feed. So what's a woman in my situation to do? I buy fresh veggies as much as I can, but they are conventional store-bought. I try to buy meats from the butcher counter instead of the packaged stuff, but even that can be more expensive than pre-packaged. I try to make my meals as healthy as possible using extra-virgin olive oil and fresh Amish butter and baking, boiling, steaming or sauteeing as opposed to frying. Anyone have any healthy money-saving tips????&lt;/p&gt;

&lt;p&gt;A few years ago I was in a Wild Oats store and their &amp;quot;fresh in season organic&amp;quot; asparagus was $6.99 a pound YIKES! It sold at the time for $2.99 a pound at store, and on sale for $1.49. Who could afford the $6.99 a pound??? Not me!!! With ten of us at home at the time (8 kids) there was NO WAY I was paying $7 a pound for asparagus! No matter how &amp;quot;organic&amp;quot;. &lt;/p&gt;
&lt;p&gt;Same goes for other foods. I am NOT paying triple and quadruple the price. I can't afford to, period.&lt;/p&gt;
&lt;p&gt;We grow some of our veggies, I can what I am able, and we buy high-quality meats. I try to buy high-quality fruits and veggies, but I will NOT pay the over-inflated prices of organic. I wash the regular veggies very well and we eat them. Many of them com from farmers in the summer and are not as costly as the &amp;quot;organic&amp;quot; foods in the store.&lt;/p&gt;
&lt;p&gt;There are only 4 of us at home now, but my food bill is still over $800 a month! (I stock up on foods, too.) I am very picky about what I buy (absolutely NO meats in vacuum sealed white plastic packages that are sprayed with gas!!!) and try to buy &amp;quot;Natural&amp;quot; meats at all times, but I watch for the sales and do not pay full prices.&lt;/p&gt;
&lt;p&gt;Food has gone sky high and I am buying many more &amp;quot;bent and dented&amp;quot; cans to add to the pantry (40% off regular retail) so that we will have foods to eat when we cannot afford to shop.&lt;/p&gt;
&lt;p&gt;Bad times are on their way and it is important to be stocked up.&lt;/p&gt;
&lt;p&gt;I have canned a lot of foods this year, including meats.&lt;/p&gt;
