As I mentioned in the previous newsletter, Sally Fallon's "Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats" is much more than a cookbook--it is a testament to a much-needed transformation of the way we look at food in America.

Once you read this book, you will gain insights into the traditional food selection and preparation of our ancestors, and learn how to apply the wisdom of their culinary customs in your modern-day life. Fallon explains why reverting to our traditional diet--complete with healthy portions of animal fats, raw dairy products and fermented vegetables--will protect you from many of the diet-related illnesses that are so prevalent today.

The following is from an e-interview that we recently had with Sally Fallon:

What spurred you to write "Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats"?

Sally Fallon

I was moved to write "Nourishing Traditions" out of my concern for the nutrition of our children. I raised my own children according to the principles of Weston Price, with plenty of butter, raw milk, eggs, animal fats and cod liver oil, and I proved that this diet works because they are all very healthy--not one ever had an earache or had to take an antibiotic.

As they were growing up, the low-fat message began to be applied to children, and I knew that this was genocide--that children brought up on low-fat diets, or diets in which vegetable oils replaced animal fats, would have numerous health problems including infertility. I felt that someone had to speak out against this misinformation.

Fortunately, I met Mary Enig [a well-known expert in the field of lipid biochemistry who contributed to the book] who shared my concerns. "Nourishing Traditions" is designed to put the research findings of Dr. Price into practical form, with particular emphasis on feeding babies and growing children.

Why should people read "Nourishing Traditions"?

"Nourishing Traditions" presents the major health issues in a systematic, accurate and easily understood form, and then provides the practical application with all the recipes. The recipes run the gamut--from very simple recipes for breakfast porridge to complex gourmet dishes.

Who would benefit from reading this book?

Parents, parents-to-be, grandparents, health practitioners, people who love to cook, people who hate to cook, people searching for answers.

What can people expect from following your advice about nutrition?

They will find that this diet is liberating. Instead of telling people what they can't eat, we tell them how to choose and prepare problematic foods (grains, dairy, salt, sweets, etc.) so that they CAN include these in their diet. They will also find that this type of diet is satisfying and gives them more energy because of the emphasis on preparing foods so that they are easy to digest.

When did you first become interested in nutrition?

I have always been interested in food, cooking and health, but what really galvanized me was reading "Nutrition and Physical Degeneration" by Weston Price about 30 years ago. I raised my children on the Price type of diet and proved to myself that it works--they (all four) were all very healthy, never had to take an antibiotic, never had an earache. This success inspired me to write a book that would impart Price's research in practical form to parents everywhere.

Do you have plans to write another book?

Yes, several more books are in the planning stages including a "Nourishing Traditions Book of Baby and Child Care"--but it will be several years.

If you could only give people one bit of advice from "Nourishing Traditions," what would it be?

Don't be afraid of saturated fats. If you are afraid of saturated fats, you will make the wrong nutritional choices; you will go down the wrong road, consuming either a low-fat diet or lots of vegetable oils. Either way you will eventually get into trouble.

What goals are you trying to reach with "Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats"?

First and foremost, to free people from the fear of fat, animal fat in particular. What Mary Enig and myself often say is that the first step to a healthy diet is getting over the fear of saturated fat. If you are trying to avoid saturated fat, you are going to make the wrong food choices.

Another goal of "Nourishing Traditions" is to reconnect people with farmers who are raising their animals outdoors on grass. This is the only way to create healthy animal fats. This movement is not only helping people be healthy but also bringing economic prosperity to small farms.

The Weston A. Price Foundation is a nonprofit, tax-exempt charity founded in 1999 to disseminate the research of nutrition pioneer Dr. Weston Price, whose studies of isolated non-industrialized peoples established the parameters of human health and determined the optimum characteristics of human diets.

Dr. Price's research demonstrated that humans achieve perfect physical form and perfect health, generation after generation, only when they consume nutrient-dense whole foods and the vital fat-soluble activators found exclusively in animal fats. Specific goals include establishment of universal access to clean, certified raw milk and a ban on the use of soy formula for infants.

The Foundation's magazine, Wise Traditions in Food, Farming and the Healing Arts, sent quarterly to members, is dedicated to exploring the scientific validation of dietary, agricultural and medical traditions throughout the world. For membership information, visit www.westonaprice.org.

The Foundation's 6th annual conference, scheduled for November 11-13 in Chantilly, Virginia (near Dulles Airport) will feature world-class speakers on the subject of diet and health, delicious traditional food and a fascinating array of exhibitors.
