Sixty Seconds to Tropical Coleslaw!

This is a fantastic recipe for both protein and mixed types.  It‘s absolutely delicious, thoroughly yummy and incredibly quick and easy to prepare.

Follow along, and soon, you‘ll be enjoying the most refreshing summer dish imaginable.

INGREDIENTS:

  • About 2 cups raw, fresh coconut, grated
  • About 2 cups raw pineapple, chopped
  • ½ cup fresh, raw cream

PREPARATION:

  1. Place coconut and pineapple in medium bowl.
  2. Add raw cream.
  3. Stir to combine well.

If you‘re a protein type, the pineapple isn‘t ideal for you, but if you‘d like a little extra zing to the dish, you may add it, or alternatively, consider substituting some raw pear in it.

If you‘re a mixed type, consider adding some little, red, seedless grapes.

Can be served with a meal or as a dessert if desired.

The recipe sounds great, particularly with the fresh grapes. I'm in table grape country and, any day now, someone will bring us a lug of fresh grapes. It happens every year. It's just the state of things. :)

As for the raw cream, I am an Organic Pastures customer as well and have a contraband gallon of their milk -- the last remaining gallon from the recall in 2006. I posted a poll on my blog about what to do with it and "send it to Luci Lock to make a smoothie" is woefully behind.  "A custard by mom" is in the lead, but I am partial to the Alex Avery idea. It looks like the milk will actually be a feature of an upcoming Organic Pastures party.

What is the most efficient way to make raw, grated coconut?  I have personally found them to be tough to break open -- any help with this would be most appreciated.  :)

What can be substituted for the raw cream? I can't handle diary. Does sound delicious, though.

How about using canned coconut cream?  Just be sure to buy a high quality brand.  You don't need much.  Just enough to keep the salad from being too dry. And I'm sure you can freeze the rest.

My aunt makes something almost identical to this, only she adds a tbsp or two of honey.  She makes it for dessert!
