Sounds Strange, Tastes Terrific!

Today‘s recipe is for a fantastic summer salad alternative. Though it may sound like an unlikely combo, the sheep‘s milk feta really brings out the flavors in the watermelon beautifully. It‘s a pretty, colorful dish as well. Trust me. You will really love this yummy dish, and there will be no going back once you‘ve tried it.

INGREDIENTS:

  • 2 cups watermelon, (seedless) chopped into bite-sized chunks
  • ¼ cup fresh mint leaves, chopped fine
  • ¾ cup raw sheep‘s milk feta cheese, crumbled

PREPARATION:

  • Place watermelon in large bowl.
  • Add mint leaves.
  • Add feta cheese.
  • Stir to combine.

There you have it! An incredibly quick and easy summer salad that you and all your guests will love!

I think I'll stick with my plain cold organic watermelon just how it is.  Yummy!!  And yes, melons should only be eaten alone!  At least a 1/2 hour before a meal and don't eat anything untill 2 hours after eating melon.

I remember reading it somewhere that Protein type and Mixed type shouldn’t consume carbohydrates on its own, I guess that includes fruits, doing so will increase your insulin level and probably imbalance your body’s biochemistry?

there seem to be a lot of improperly combined recipies around here, though they are otherwise healthy... fruit should be eaten alone, it is not digested properly in combination with other foods, and melon shouldn't even be mixed with other fruits

What about people with blood-sugar problems?  Eating fruit by itself could easily mess them up royally.

You know, when I was pregnant I had gestational diabetes and I sometimes had to have ice cream.  Yeah, I know REALLY,REALLY bad for me.  But it is sooooo darn good!  And I gotta live sometimes. Anyway..... I used to take these rice solubles (which taste great!), a big heaping tablespoon right before eating the ice cream and let me tell you.... I would test my blood sugar and it was always normal 1 hour afterwards.  It wasn't when I didn't take the rice solubles.  

I would also say immediate exercise after eating something that you know will increase your blood sugar and limit the amount that you eat.  Eat a protein 1/2 an hour later as well.

i just plain think FETA is waaaay too salty therefore i would avoid this dish. i practically eat no salt in my diet and feta tastes definitely out of specification!

From my understanding of food combining, melons are best eaten on their own. Combining melons with any other grouping (proteins, starches, vegetables, fats, acid fruit, sub-acid fruit and sweet fruit) is considered a poor combination with an attendant loss of energy and an extra burden on the digestive system. Could someone with expertise in this area confirm this? Thanks

Being of Greek background, we would eat watermelon and feta all the time in the summertime! It's surprisingly tasty. But we never mixed them in a salad.

Lucie be careful?  Seedless watermelon is well known to be a genetically modified food.  Any time man messes with the design, the results tend to never be good.

Add some black olives and thinly sliced red onion soaked in lime juice and it is even better.  I have served this for several summers and it is a surprisingly favorite.  I found this receipe in a Nigella Lawson cookbook.

I have been making this salad for years and I and guests adore it...However, I add to the salad red or sweet onion and a balsamic olive oil vinegrette.  But you must  put both the feta and the vinegrette on JUST before serving because the affect is to release the watermelon's juices and you do not want it too soupy/juiciy from the get go...You can have the mint leaves savour with the watermelon for any length of time for flavorization...also using a melon scoop is prettier...I have also made this with a medley of other fruits, some watermelon, some cantelope, some not too ripe peaches and pears.  That too was adored!
