The growing popularity of high-protein, low-carbohydrate diets
such as the Atkins diet
are taking a rising toll on the bread industry. In the past year
the consumption of bread has taken a major plunge in America. It
is estimated that 40 percent of Americans are eating less bread
than in 2002, and the average American eats 54 pounds of bread a
year, barely a third of the quantity consumed by the French and
Italians.
According to a survey, around 32 million Americans are now on high-protein,
low-carbohydrate diets, which is making the U.S. bread industry
very nervous. It is still unclear whether the decline in bread sales
is a temporary fad or more of a permanent change in eating habits.
