Chilled Curry Chicken Salad for Hot Summer Nights

Here‘s a great recipe for protein types, a lovely chilled curried chicken salad. Absolutely delicious!

INGREDIENTS:

1½ cups dark meat chicken, cooked & chopped
1 cup Granny Smith apples, chopped (may substitute fresh cranberries)
½ cup raw almonds, sliced
½ to ¾ cup fresh, raw cream
½ teaspoon raw honey
½ rounded teaspoon curry paste (may use curry powder instead), or to taste

PREPARATION:

  1. Place chicken, apples and almonds in medium-sized bowl
  2. Add raw cream
  3. Add curry paste or powder
  4. Add raw honey
  5. Stir well to combine

You‘ll find that the chicken turns a gorgeous color from the curry.

Though strictly speaking, it‘s not on the protein-type diet, you could wrap the salad in some lettuce leaves or large, fresh spinach leaves.

Great for summer picnics, or when friends are over for a barbeque.

This is great with raisens either in place of the apple or with it and accompanied by chopped cabbage (cole slaw style chopped cabbage), .... and served on top of a bed of red leaf lettuce or fresh raw spinach and cherry tomatoes. ..... Makes a real nice meal.

If one is not able to use ANY dairy products (including raw), what would be a good substitute for the raw cream?

Also, can anyone help?  I notice Luci's words are never "in sinc" with her mouth!   Is there some kind of adjustment I need to make somewhere?

May I ask why you can't have even raw milk?  Is it because of allergies?  There shouldn't be a problem with allergies when using raw milk, cream, butter, and cheese.  I would recommend to not use pastuerized cream in this receipe as it is deterimental to your health.  Mercola talks a lot about this is his articles.  If you live in California, you can buy raw cream from "Organic Pastures Diary" which is obtainable from many markets in Califonia.  See there website for location of shops that carry it.

We enjoy a similar salad this time of year with fresh grapes. It's fantastic and it's about time for the grapes.
