Here‘s a great recipe for protein types, a lovely chilled curried chicken salad. Absolutely delicious!
INGREDIENTS:
1½ cups dark meat chicken, cooked & chopped1 cup Granny Smith apples, chopped (may substitute fresh cranberries)½ cup raw almonds, sliced½ to ¾ cup fresh, raw cream½ teaspoon raw honey½ rounded teaspoon curry paste (may use curry powder instead), or to taste
PREPARATION:
You‘ll find that the chicken turns a gorgeous color from the curry.
Though strictly speaking, it‘s not on the protein-type diet, you could wrap the salad in some lettuce leaves or large, fresh spinach leaves.
Great for summer picnics, or when friends are over for a barbeque.
