It was discovered 30 years ago in a Canadian marsh but just recently orange cauliflower has begun to claim its territory in the U.S. market.

The cauliflower hybrid can be purchased from garden catalogs and its attractive appearance has caught the interest of restaurant chefs.

The Stages of Development

  • The beginning stages of development started in 1981.
  • The development process was changed to include crossbreeding after the mutant cauliflower was smaller in size and less flavorful than white cauliflower.
  • The cauliflower was then crossbred with white cauliflower.

Features of the Orange Cauliflower

  • The color remains orange even after the cauliflower is cooked.
  • It’s easy to grow and grows in poor weather conditions, unlike white cauliflower that doesn’t grow well in unfavorable weather conditions due to its sensitivity to the certain elements of nature such as rain and heat.
  • Contains around 25 times more vitamin A than white cauliflower.
